Ingredients

  • 8 oz soba noodles
  • 1 tbsp vegetable oil
  • 1 onion, sliced
  • 2 carrots, julienned
  • 1 red bell pepper, sliced
  • 1 zucchini, sliced
  • 4 cups vegetable broth
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp rice vinegar
  • 1 tsp ginger paste
  • 1 tsp garlic paste
  • Salt and pepper, to taste
  • Green onions, for garnish

Instructions

  1. Cook soba noodles according to package instructions. Drain and set aside.

  2. In a large pot, heat vegetable oil over medium heat. Add onion, carrots, bell pepper, and zucchini. Sauté for 5-7 minutes, until vegetables are tender.

  3. Add vegetable broth, soy sauce, sesame oil, rice vinegar, ginger paste, and garlic paste to the pot. Season with salt and pepper.

  4. Bring the mixture to a boil, then reduce heat to low and let it simmer for 10 minutes.

  5. Add cooked soba noodles to the pot and stir to combine. Cook for an additional 2-3 minutes.

  6. Serve hot, garnished with green onions.
