How To Make Veggie Noodle Pot

Ingredients
- 8 oz soba noodles
- 1 tbsp vegetable oil
- 1 onion, sliced
- 2 carrots, julienned
- 1 red bell pepper, sliced
- 1 zucchini, sliced
- 4 cups vegetable broth
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tbsp rice vinegar
- 1 tsp ginger paste
- 1 tsp garlic paste
- Salt and pepper, to taste
- Green onions, for garnish
Instructions

Cook soba noodles according to package instructions. Drain and set aside.

In a large pot, heat vegetable oil over medium heat. Add onion, carrots, bell pepper, and zucchini. Sauté for 5-7 minutes, until vegetables are tender.

Add vegetable broth, soy sauce, sesame oil, rice vinegar, ginger paste, and garlic paste to the pot. Season with salt and pepper.

Bring the mixture to a boil, then reduce heat to low and let it simmer for 10 minutes.

Add cooked soba noodles to the pot and stir to combine. Cook for an additional 2-3 minutes.

Serve hot, garnished with green onions.
