Ingredients

  • 8 oz soba noodles
  • 1 cup shelled edamame
  • 1 cup cooked chicken breast, shredded
  • 1/4 cup sesame oil
  • 2 tbsp rice vinegar
  • 1 tbsp soy sauce
  • 1 tbsp honey
  • 1 tbsp sesame seeds
  • 2 green onions, sliced
  • Salt and pepper to taste

Instructions

  1. Cook soba noodles according to package instructions. Drain and rinse under cold water.

  2. In a large bowl, combine cooked soba noodles, edamame, and shredded chicken.

  3. In a small bowl, whisk together sesame oil, rice vinegar, soy sauce, honey, sesame seeds, green onions, salt, and pepper.

  4. Pour the dressing over the noodle mixture and toss until well coated.

  5. Serve chilled and enjoy!
