How To Make Soba Noodle Soup

A warming and flavorful Japanese soup with buckwheat noodles, vegetables, and protein.

Ingredients

  • 6 cups of chicken or vegetable broth
  • 4 oz soba noodles
  • 1 cup sliced mushrooms
  • 1 cup spinach
  • 2 green onions, sliced
  • 1 tbsp soy sauce
  • 1 tsp grated ginger
  • 1 tsp sesame oil
  • 1/2 lb cooked chicken or tofu (optional)

Instructions

  1. Bring the broth to a boil in a large pot.

  2. Add the soba noodles and reduce heat to a simmer.

  3. Add the mushrooms, spinach, green onions, soy sauce, ginger, and sesame oil to the pot.

  4. Simmer for 5-10 minutes or until the vegetables are tender.

  5. Serve hot, optionally topped with cooked chicken or tofu.
