- 1 store-bought pie crust
- 1 cup cherry tomatoes, halved
- 1 tbsp olive oil
- 1/2 cup fresh basil leaves, chopped
- 1 cup grated Parmesan cheese
- 4 eggs
- 1 cup milk
- Salt and pepper, to taste
Instructions

Preheat the oven to 375°F (190°C).

Roll out the pie crust and press it into a 9-inch pie dish. Trim any excess crust.

In a bowl, toss the cherry tomatoes with olive oil, salt, and pepper. Spread them evenly on a baking sheet and roast for 15 minutes.

In a separate bowl, whisk together the eggs, milk, salt, and pepper.

Sprinkle half of the grated Parmesan cheese onto the pie crust. Top with the roasted tomatoes and chopped basil.
