How To Make Copycat Aunt Jemima's Pancake Mix

Ingredients
- 1 cup all-purpose flour
- 1½ tsp baking powder
- 1 cup pancake mix, of your choice, preferably Bisquick
- ¼ cup granulated sugar
- ¼ cup non-dairy creamer powder
- 1 egg
- 8 oz lemon lime soda, preferably 7UP®
To Serve:
- ¼ cup fresh blueberries, per serving
- 1 tsp powdered sugar, per serving
Instructions

Sift together the flour, pancake mix, sugar, baking powder, and creamer powder. Set aside.

Mix the egg and lemon lime soda into a mixing bowl until evenly incorporated.

Whisk the flour mixture and soda mixture until evenly incorporated.

Using a griddle or a pan, fry the pancakes until golden brown on both sides.

Serve with any of your favorite accompaniments like pancake syrups (or any fruit flavored syrups), fresh fruits, fruit jams, or butter.
