How To Make Clementine & vanilla porridge with citrus salsa

Breakfast bowls are really convenient because all you have to do is literally toss together the ingredients in a bowl, and you’ve got yourself a hearty breakfast. You might have already seen the trendy bowls of quinoa seeds with fruits and nuts around social media. But did you know that you can have savory renditions of this morning meal, too? Ingredients

  • 1 cup oats
  • 2 cups milk
  • 4 clementines
  • 1 vanilla pod
  • 1 tbsp honey
  • 1/4 cup chopped mixed citrus fruits (orange, grapefruit, lemon)
  • 1 tbsp chopped fresh mint leaves
  • 1 tbsp chopped pistachios

Instructions

  1. In a saucepan, combine the oats, milk, and juice from 2 clementines.

  2. Split the vanilla pod lengthwise, scrape out the seeds, and add them to the saucepan. Also, add the empty pod for more flavor.

  3. Cook the mixture over medium heat, stirring occasionally, until the oats are cooked and the porridge is creamy, about 10-15 minutes.

  4. Remove the vanilla pod and discard.

  5. Stir in the honey and let the porridge cool for a few minutes.

  6. In a separate bowl, combine the chopped mixed citrus fruits, juice from the remaining clementines, and chopped mint leaves.

  7. Serve the porridge in bowls, topped with the citrus salsa and sprinkled with chopped pistachios.
