  • 4 large potatoes, peeled and cut into chunks
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt to taste
  • Freshly ground black pepper to taste

Instructions

  1. Preheat the oven to 425°F (220°C).

  2. In a large bowl, combine the potatoes, olive oil, garlic powder, dried thyme, dried rosemary, salt, and black pepper. Mix well to coat the potatoes evenly.

  3. Transfer the potatoes to a baking sheet in a single layer.

  4. Roast in the preheated oven for about 45 minutes, or until the potatoes are golden brown and crispy, flipping halfway through cooking.

  5. Remove from the oven and let cool for a few minutes before serving.
