Ingredients

  • 1 cup buckwheat groats
  • 2 cups water
  • 2 cups almond milk
  • 1/4 tsp salt
  • 2 tbsp honey
  • 1 tsp vanilla extract
  • Toppings of your choice (fresh fruit, nuts, seeds)

Instructions

  1. Rinse buckwheat groats and add to a medium pot with water and salt.

  2. Bring to a boil, then reduce heat and let simmer for 10-12 minutes, or until water is absorbed.

  3. Add almond milk, honey, and vanilla extract to the pot and stir to combine.

  4. Let simmer for another 5-8 minutes, stirring occasionally, until desired consistency is reached.

  5. Serve hot with your choice of toppings.
