I use the recipe for cornbread on the back of the cornmeal mix. I have a hot sandwich maker where I make mine which makes them quickly. They taste great dipped in mustard.
How To Make Spinach Cornbread
Make cornbread even better by adding in some baby spinach.

Ingredients
- 1 cup white cornmeal, or yellow cornmeal
- 1 egg, unbeaten
- ¾ cup milk
- 1 tbsp oil
- 1 cup baby spinach leaves, chopped
Instructions

Preheat oven to 400 degrees F.

Mix all ingredients together and pour batter into greased cornbread muffin pans or rectangular pan and bake for 30 to 35 minutes.
- Cut in squares and serve with mustard.
For hot sandwich machine use:
- Spray with baking spray.

Once machine is hot and ready, pour batter into molds and close lid to bake for about 3 to 5 minutes.

Repeat until all batter is used.
