How To Make Beef and Cornbread Casserole

This hearty casserole is filled with tender beef, sweet cornbread, and savory spices.

Ingredients

  • 1 lb ground beef
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 2 garlic cloves, minced
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 can (15 oz) corn, drained
  • 1 can (14 oz) diced tomatoes, drained
  • 1 box (8.5 oz) cornbread mix
  • 1/2 cup milk
  • 1 egg
  • 1/2 cup shredded cheddar cheese

Instructions

  1. Preheat oven to 375°F.

  2. In a large skillet, cook beef, onion, bell pepper, and garlic over medium heat until beef is no longer pink.

  3. Add chili powder, cumin, salt, and black pepper to the skillet and stir well.

  4. Stir in corn and diced tomatoes and cook for 2 minutes.

  5. Pour beef mixture into a 9×13 inch baking dish.

  6. In a separate bowl, mix cornbread mix, milk, and egg until smooth.

  7. Pour cornbread mixture over the beef mixture.

  8. Sprinkle shredded cheddar cheese on top.

  9. Bake for 20-25 minutes, or until a toothpick inserted in the center of the cornbread comes out clean.

  10. Serve hot.
