Ingredients

  • 1 pound ground beef
  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 cup frozen corn
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 1 packet (1.25 oz) taco seasoning
  • 1 box (8.5 oz) cornbread mix
  • 1/3 cup milk
  • 1 egg
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×9 inch baking dish.

  2. In a large skillet, cook ground beef, onion, bell pepper, and garlic over medium heat until beef is browned and vegetables are tender. Drain any excess grease.

  3. Stir in frozen corn, black beans, diced tomatoes, tomato sauce, and taco seasoning. Cook for an additional 5 minutes, until heated through.

  4. In a separate bowl, prepare the cornbread mix according to package instructions, using milk and egg.

  5. Pour the beef and vegetable mixture into the greased baking dish. Top with the prepared cornbread batter.

  6. Sprinkle shredded cheddar cheese over the top.

  7. Bake in the preheated oven for 25-30 minutes, or until the cornbread is golden brown and a toothpick inserted into the center comes out clean.

  8. Allow the tamale pie to cool for a few minutes before serving.
