How To Make Robertas Pizza Dough

Do you love the crust as much as the toppings? Then, this chewy Robertas pizza dough, made with simple ingredients, is perfect for you.

  • 1 cup 00 flour, plus additional 1 tbsp
  • 1 cup all-purpose flour, plus additional 1 tbsp and 2 tsp
  • 1 tsp fine sea salt
  • ¾ tsp active dry yeast
  • 1 tsp extra-virgin olive oil
  • 220 g water, luke warm


  1. In a large mixing bowl combine the 2 types of flour and salt.

  2. In a small mixing bowl, stir together 200 grams (a little less than 1 cup) of lukewarm tap water, yeast, and olive oil. Then, pour it into the flour mixture. Knead using the hands for approximately 3 minutes until well combined, then let the mixture rest for 15 minutes.

  3. Knead rested dough for 3 minutes. Cut into 2 equal pieces and shape each into a ball. Place on a heavily floured surface, cover with a dampened cloth and let rest and rise for 3 to 4 hours at room temperature or for 8 to 24 hours in the refrigerator.

  4. To make pizza, place each dough ball on a heavily floured surface and use the fingers to stretch it, then use hands to shape it into rounds or squares. Brush the surface of each spread out pizza dough with olive oil, then top it with favorite toppings and bake.

  5. Cook at 450 degrees F for 10 to 15 minutes.

  6. Serve and enjoy.

Recipe Notes

If you refrigerate the dough, remove it 30 to 45 minutes before you begin to shape it for pizza.
