You will love the sweetness and bursting flavors of this orange apricot loaf made with orange zest and orange juice then topped with raisins.

Ingredients

  • ½cupsultana raisins,chopped
  • ¼cupdried apricots,chopped
  • 1tbsporange zest
  • 2tbsporange juice
  • 3tbspbutter,softened
  • ½cupwhite sugar
  • 1egg
  • 2cupsself-rising flour
  • ¾cupmilk

Instructions

  1. Preheat oven to 350 degrees F. Lightly grease a 9×5 inch loaf pan. In a small bowl, combine sultanas, apricots, orange rind, and orange juice. Let stand for 10 minutes.

  2. In a large bowl, cream butter and sugar together. Beat in egg. Stir in fruit. Stir in flour alternately with milk. Pour batter into prepared pan.

  3. Bake in preheated oven for 40 to 45 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
