How To Make 3 Cheese Semolina Bread
Semolina bread has an intense flavor compared to the white bread. It's aromatic and whiney that you should try making with this semolina bread recipe.
Ingredients
- 2 cups all-purpose flour, plus more for dusting
- 1⅛ cups water, warm but no more than 135 degrees F
- 1 cup semolina flour, plus more for dusting
- 1 cup pecorino cheese, or parmesan, manchego cheese, grated (avoid using any powdered variant)
- 1 cup emmental cheese, or mozzarella, gruyere cheese, grated
- 1 cup Asiago cheese, or provolone, monterey jack cheese, grated
- 2 tbsp granulated sugar
- 1 tbsp olive oil
- 1 tbsp active dry yeast
- 1 tsp salt
- cooking spray
To serve:
- 2 tbsp honey
- 2 tbsp strawberry jam, or any accompaniment of your choice
Instructions
-
In a bowl, dissolve the sugar and yeast in warm water.
-
Set aside and allow the yeast to bloom at room temperature for roughly 15 minutes.
-
In a large bowl, sift together both flour and salt. Make a well at the center, then pour in the bloomed yeast mixture. Fold until a dough is formed.
-
Dust your working area with flour, then knead the dough for roughly 10 to 12 minutes until smooth and elastic.
-
Add all your cheese to the dough and knead together until well combined.
-
Grease a large mixing bowl with oil, then place your dough in it. Cover and set aside in a warm area. Allow the dough to rise for at least 2 hours. Note that it will only rise to nearly double in size. This is due to the amount of cheese that weighs down your dough.
-
While waiting, grease a baking sheet with cooking spray, then line it with parchment paper. Preheat the oven to 380 degrees F.
-
Dust your working area again with flour, place your risen dough, and shape it by tucking and stretching in until a smooth oblong is formed. Some of the cheese will fall off during this process, and it's alright. Just push these back in.
-
Dust semolina over your lined baking sheet, and place the loaf on it. Cover and allow to rise again for an hour in a warm area.
-
Bake bread in the oven for roughly 35 minutes or until golden brown.
-
Allow the bread to cool down briefly at room temperature once baked.
-
Portion and serve accordingly with honey and strawberry jam or any accompaniment of your choice.
