  • 1 can of white beans, drained and rinsed
  • 2 cups of cherry tomatoes, halved
  • 1/4 red onion, sliced thinly
  • 3 tbsp of extra-virgin olive oil
  • 1 tbsp of red wine vinegar
  • 1 tsp of Dijon mustard
  • 1 clove of garlic, minced
  • Salt and pepper
  • Handful of fresh basil leaves


  1. In a large bowl, combine the white beans, cherry tomatoes, and red onion.

  2. In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, garlic, salt, and pepper.

  3. Pour the dressing over the salad and toss everything until well coated.

  4. Add fresh basil leaves on top before serving.
