How To Make White Bean Stew Recipe
A hearty vegetarian stew packed with protein and fiber from white beans and veggies, simmered in a flavorful tomato broth.

Ingredients
- 2 tbsp olive oil
- 1 yellow onion, chopped
- 3 garlic cloves, minced
- 2 celery stalks, chopped
- 2 small carrots, chopped
- 1 red bell pepper, diced
- 2 cans of white beans, drained and rinsed
- 2 cups vegetable broth
- 1 cup crushed tomatoes
- 1 tsp smoked paprika
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions

Heat olive oil in a large pot over medium heat.

Add onion, garlic, celery, carrots, and pepper, and sauté until onion is translucent.

Add white beans, vegetable broth, crushed tomatoes, paprika, thyme, salt, and pepper, and stir well.

Bring the mixture to boil, then reduce heat and let it simmer for 20 minutes until the veggies are tender and the stew thickens.
