Ingredients

  • 1 cup mixed legumes (such as lentils, chickpeas, and kidney beans), soaked overnight
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 bell pepper, diced
  • 1 cup chopped tomatoes
  • 6 cups vegetable broth
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. In a large pot, sauté the onion and garlic in a little bit of oil until fragrant.

  2. Add the carrots, celery, and bell pepper, and cook for about 5 minutes.

  3. Add the chopped tomatoes, mixed legumes, and vegetable broth, and bring to a boil.

  4. Add the cumin, coriander, smoked paprika, salt, and pepper, and reduce the heat to a simmer.

  5. Cook for about 1 hour, or until the legumes are tender.

  6. Serve hot, garnished with fresh chopped parsley.
