How To Make Legume Curry Recipe

A delicious and hearty curry packed with protein and fiber from a variety of legumes and spices.

Serves:

Ingredients

  • 1 cup of mixed legumes (chickpeas, lentils, kidney beans, etc.), soaked overnight and cooked
  • 1 onion, diced
  • 3 cloves of garlic, minced
  • 1 tbsp of ginger, grated
  • 1 tbsp of curry powder
  • 1 tsp of turmeric powder
  • ½ tsp of cumin powder
  • 1 cup of tomato puree
  • 2 cups of vegetable broth
  • Salt and pepper, to taste
  • 2 tbsp of oil

Instructions

  1. Heat oil in a large pot over medium heat.

  2. Add onion, garlic and ginger and sauté until onion is translucent.

  3. Add curry powder, turmeric powder, cumin powder and salt and pepper and sauté for 1 minute.

  4. Add tomato puree and vegetable broth and bring to a simmer.

  5. Add cooked legumes and simmer for 20-25 minutes until the sauce has thickened and the legumes are tender.

  6. Serve hot with rice or naan bread.
