How To Make Kidney Bean Chili Recipe

A hearty and flavorful chili made with kidney beans, perfect for a cozy meal on a chilly day.

Serves:

Ingredients

  • 2 cans of kidney beans, drained and rinsed
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 2 cloves of garlic, minced
  • 1 tbsp of chili powder
  • 1 tsp of cumin
  • 1 tsp of smoked paprika
  • 1 can of crushed tomatoes
  • 1 cup of vegetable broth
  • Salt and black pepper, to taste
  • Chopped fresh cilantro, for garnish
  • Cooked rice, for serving

Instructions

  1. In a large pot, heat some oil over medium heat. Add the onion and red bell pepper. Cook until tender, stirring occasionally, for about 5 minutes.

  2. Add the garlic, chili powder, cumin, and smoked paprika. Stir and cook for another minute.

  3. Add the kidney beans, crushed tomatoes, and vegetable broth. Bring to a simmer and let cook for about 20-25 minutes, or until the desired consistency is reached.

  4. Season with salt and black pepper, to taste.

  5. Serve with cooked rice and garnish with chopped fresh cilantro.
