  • 1 lb fava beans, shelled
  • 1/4 cup crumbled feta cheese
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped scallions
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • Salt and pepper, to taste

Instructions

  1. Bring a pot of salted water to a boil. Add fava beans and cook for 5-7 minutes until tender. Drain and rinse with cold water.

  2. In a bowl, mix together fava beans, feta cheese, parsley, and scallions.

  3. In a separate bowl, whisk together olive oil, lemon juice, salt, and pepper.

  4. Pour dressing over fava bean mixture and toss to combine.

  5. Serve immediately or chill in the refrigerator until ready to serve.
