How To Make Fava Bean and Couscous Pilaf Recipe
This vegetarian dish is full of protein and flavor, perfect for a healthy lunch or dinner.

Ingredients
- 1 cup couscous
- 2 cups vegetable broth
- 1 can fava beans, drained and rinsed
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper, to taste
- 2 tbsp olive oil
- Fresh parsley, for garnish
Instructions

In a medium saucepan, bring the vegetable broth to a boil. Add the couscous and stir. Cover and remove from heat. Let sit for 5 minutes, then fluff with a fork.

In a large skillet, heat the olive oil over medium-high heat. Add the onion and garlic and sauté until softened, about 3-4 minutes.

Add the fava beans, cumin, paprika, salt and pepper to the skillet. Cook for 5-7 minutes, until the beans are heated through.

Add the cooked couscous to the skillet and stir to combine.

Serve hot, garnished with fresh parsley.
