How To Make Fava Bean and Couscous Pilaf Recipe

Serves:

Ingredients

  • 1 cup couscous
  • 2 cups vegetable broth
  • 1 can fava beans, drained and rinsed
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper, to taste
  • 2 tbsp olive oil
  • Fresh parsley, for garnish

Instructions

  1. In a medium saucepan, bring the vegetable broth to a boil. Add the couscous and stir. Cover and remove from heat. Let sit for 5 minutes, then fluff with a fork.

  2. In a large skillet, heat the olive oil over medium-high heat. Add the onion and garlic and sauté until softened, about 3-4 minutes.

  3. Add the fava beans, cumin, paprika, salt and pepper to the skillet. Cook for 5-7 minutes, until the beans are heated through.

  4. Add the cooked couscous to the skillet and stir to combine.

  5. Serve hot, garnished with fresh parsley.
