Ingredients
- 1 pound beef, cubed
- 1 onion, diced
- 2 cloves garlic, minced
- 1 jalapeno, diced (optional)
- 1 can (14.5 oz) diced tomatoes
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (12 oz) beer
- 2 tablespoons chili powder
- 1 tablespoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- Toppings: shredded cheese, diced avocado, sour cream, chopped cilantro
Instructions

In a large pot, heat oil over medium heat. Add the beef cubes and cook until browned. Remove from the pot and set aside.

In the same pot, add the diced onion, minced garlic, and jalapeno (if using). Cook until the onion is translucent.

Return the beef to the pot and add the diced tomatoes, kidney beans, beer, chili powder, cumin, paprika, salt, and pepper. Stir well.

Bring the chili to a simmer, then reduce the heat to low. Cover and let it cook for 1.5 to 2 hours, stirring occasionally.
