Ingredients
- 1 pound ground beef
- 1 onion, diced
- 3 cloves garlic, minced
- 1 red bell pepper, diced
- 1 can (14 ounces) kidney beans, drained and rinsed
- 1 can (14 ounces) diced tomatoes
- 1 cup beef broth
- 2 tablespoons chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- 1 cup plain yogurt
- 1 chipotle pepper in adobo sauce, minced
- 1 tablespoon lime juice
- Fresh cilantro, chopped (for garnish)
Instructions

In a large pot, cook the ground beef over medium heat until browned. Drain any excess fat.

Add the diced onion, minced garlic, and diced bell pepper to the pot. Cook until the vegetables are softened.

Stir in the kidney beans, diced tomatoes, beef broth, chili powder, cumin, salt, and pepper. Bring to a simmer and let cook for 45 minutes, stirring occasionally.

In a small bowl, combine the plain yogurt, minced chipotle pepper, and lime juice. Mix well.

Serve the beef and bean chili in bowls, topped with a dollop of chipotle yogurt and a sprinkle of fresh cilantro.
