Ingredients
- 1 can kidney beans, drained and rinsed
- 1 cup rice
- 2 tbsp vegetable oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 tsp cumin powder
- 1 tsp chili powder
- Salt and pepper, to taste
- 4 tortillas
- 1 cup grated cheese
- Fresh cilantro, chopped
Instructions

Cook rice according to package instructions.

Heat oil in a pan and sauté onion and garlic until fragrant.

Add bell peppers, cumin powder, chili powder, salt, and pepper. Cook until the vegetables are soft.

Stir in kidney beans and cooked rice. Cook for a few minutes until heated through.

Warm tortillas in a skillet or microwave.

Place a spoonful of the bean and rice mixture on each tortilla. Top with grated cheese and fresh cilantro.

Fold in the sides of the tortilla and roll tightly to form a burrito.
