How To Make White Bean Crostini

This healthy crostini recipe makes use of white beans that’s seasoned with thyme and garlic. It’s a great appetizer that you can definitely make ahead.

Ingredients

For White Bean Spread:

  • 2cupsCannelini,or Northern Beans
  • 2tbspolive oil
  • 4tbspwater
  • 1tbspfresh thyme
  • 1clovegarlic
  • salt and fresh pepper

For Crostini:

  • pcsbaguette,4 oz, sliced into ¼” pieces
  • clovegarlic
  • Olive oil spray
  • extra thyme,for garnish
  • balsamic vinegar

Instructions

  1. Cut the bread into ¼-inch thin slices.

  2. Toast in the oven with a little olive oil spray at 400 degrees F turning once until toasted.

  3. Once the bread is toasted, lightly rub it with a garlic clove cut in half.

  4. Purée in a small blender or magic bullet all the ingredients for the white bean spread. Add a little more water if it’s too dry.

  5. Top each piece with 2 teaspoons of white bean puree and garnish with fresh thyme.

  6. Drizzle with a touch of balsamic right before serving.
