How To Make Bagel Chips with Ricotta, Chive Puree, and Prosciutto

Bagel chips give this simple appetizer a nice flavor and a fun crunch. They’re topped with prosciutto, some creamy ricotta, and fresh chives.

Ingredients

  • ½cupchives,snipped
  • ¼cupextra virgin olive oil
  • 2tbspmarcona almonds
  • salt
  • 1cupfresh ricotta cheese
  • 48smallplain bagel chips,(1½ inches), or dried apricot halves
  • 12prosciutto,(about 4 oz), thin slices

Instructions

  1. In a blender or mini food chopper, combine chives, olive oil, almonds, and a pinch of salt and pulse to a coarse puree.

  2. In a small bowl, lightly season ricotta with salt and spread about 1 teaspoon onto each bagel chip.

  3. Carefully spoon a small dollop of chive puree on top of each chip and garnish each with a loosely rolled up slice of prosciutto.

  4. Transfer bagel chips to a platter and serve.
