How To Make Calamari Stuffed Peppers Recipe

Fresh roasted bell peppers stuffed with tender calamari, creamy feta cheese and crispy breadcrumbs. A perfect combination of flavors and textures!

Ingredients

  • 4 bell peppers, halved and seeded
  • 1 lb. calamari, cleaned and chopped
  • 1 cup feta cheese, crumbled
  • 1/2 cup breadcrumbs
  • 1/4 cup parsley, chopped
  • 2 garlic cloves, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F.

  2. In a large skillet over medium heat, cook garlic in 1 tbsp olive oil until fragrant.

  3. Add calamari and cook until opaque, about 5 minutes.

  4. Remove from heat and mix in feta, breadcrumbs and parsley.

  5. Season with salt and pepper to taste.

  6. Place pepper halves in a baking dish and fill with calamari mixture.

  7. Drizzle with remaining olive oil and bake for 25-30 minutes, until peppers are tender and filling is golden brown.
