How To Make Calamari and Cilantro Lime Rice Recipe

Ingredients

  • 1 lb. calamari, sliced into rings
  • 1 cup jasmine rice
  • 2 cups water
  • 1/4 cup chopped fresh cilantro
  • Juice of 1 lime
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Rinse rice and add to a pot with water. Bring to a boil, then reduce heat and cover for 12-15 minutes, until water is absorbed.

  2. While rice cooks, heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for 1-2 minutes.

  3. Add calamari to skillet and cook for 4-5 minutes, until tender.

  4. Add chopped cilantro, lime juice, and salt/pepper to rice. Fluff with a fork to combine.

  5. Serve calamari and rice together.
