How To Make Calamari and Chickpea Stew

A hearty Mediterranean stew featuring tender calamari and protein-packed chickpeas.

Serves:

Ingredients

  • 1 lb calamari, cleaned and sliced into rings
  • 1 can chickpeas, drained and rinsed
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 red bell pepper, diced
  • 1 can diced tomatoes
  • 1 tsp paprika
  • 1/2 tsp cumin
  • 1/4 tsp cayenne pepper
  • 2 cups chicken or vegetable broth
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.

  2. Add onion and sauté until softened, about 3 minutes.

  3. Add garlic and cook for 1 minute, until fragrant.

  4. Add red bell pepper and cook for 2-3 minutes, until softened.

  5. Add spices (paprika, cumin, cayenne pepper) and cook for 1 minute, until fragrant and toasted.

  6. Pour in chicken or vegetable broth, canned tomatoes, and chickpeas. Bring to a boil.

  7. Reduce heat and let simmer for 10 minutes.

  8. Add in the calamari and cook for an additional 10-12 minutes, until it is cooked through and tender.

  9. Season with salt and pepper, to taste.

  10. Serve hot with a sprinkle of fresh parsley on top.
