Ingredients
- 4 wild goose breasts
- 1 cup freshly squeezed orange juice
- 1/4 cup honey
- 2 tablespoons soy sauce
- 2 cloves garlic, minced
- Salt and pepper, to taste
- 1 tablespoon vegetable oil

Preheat the oven to 425°F (220°C).

In a small saucepan, combine the orange juice, honey, soy sauce, garlic, salt, and pepper. Bring to a simmer over medium heat and cook for 8-10 minutes, or until the mixture has reduced and thickened slightly.

Heat the vegetable oil in a large skillet over medium-high heat. Season the goose breasts with salt and pepper and sear them in the skillet for 2-3 minutes on each side, or until browned.

Transfer the seared goose breasts to a baking dish and brush them generously with the orange glaze.

Place the baking dish in the preheated oven and roast for 10-12 minutes, or until the goose breasts reach an internal temperature of 160°F (71°C) for medium-rare.

Remove the baking dish from the oven and let the goose breasts rest for a few minutes before slicing.

Serve the wild goose breasts with the remaining orange glaze drizzled over the top.
