How To Make Goose Stew Recipe

Ingredients

  • 1 goose (4-5 pounds), cut into pieces
  • 2 tbsp olive oil
  • 2 onions, diced
  • 3 carrots, sliced
  • 3 celery stalks, sliced
  • 4 garlic cloves, minced
  • 2 bay leaves
  • 2 sprigs of thyme
  • 2 cups of chicken broth
  • 1 cup of red wine
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F.

  2. Heat oil on medium-high heat in a large Dutch oven.

  3. Add goose pieces and brown on all sides, about 10 minutes.

  4. Remove goose pieces from the pot and add onions, carrots, celery, garlic, bay leaves, and thyme. Cook until softened, about 10 minutes.

  5. Add chicken broth, red wine, and bring to a simmer.

  6. Add the goose pieces back to the pot and season with salt and pepper.

  7. Cover and place in the oven for 1 hour and 30 minutes, or until the goose is tender.

  8. Adjust seasoning to taste and serve hot with crusty bread.
