How To Make Goose Confit Recipe

Tender and flavorful goose legs braised in fat until falling off the bone.

Serves:

Ingredients

  • 4 goose legs
  • 1/4 cup kosher salt
  • 1/4 cup sugar
  • 1 tbsp black peppercorns
  • 6 garlic cloves, peeled and crushed
  • 6 sprigs fresh thyme
  • 2 bay leaves
  • 2 cups rendered duck or goose fat
  • 1 cup duck or chicken stock

Instructions

  1. In a large bowl, combine salt, sugar, and peppercorns. Rub mixture onto both sides of goose legs.

  2. Add garlic, thyme, and bay leaves to bowl, and cover with plastic wrap. Place in refrigerator overnight.

  3. Preheat oven to 300°F.

  4. Rinse goose legs and pat dry with paper towels.

  5. Heat fat in a large Dutch oven over medium heat. Add goose legs and cook until browned on all sides, about 8 minutes.

  6. Pour stock into pot and bring to a simmer. Cover and place in oven for 3-4 hours, until meat is tender and falling off the bone.

  7. Remove from oven and let cool in fat for 30 minutes.

  8. Remove legs from pot and transfer to a baking sheet. Place in oven at 400°F for 15-20 minutes, until skin is crispy.

  9. Serve with potatoes or vegetables.
