How To Make Delicata Squash and Bacon Pasta Recipe
Creamy pasta with roasted delicata squash and bacon bits.

Ingredients
- 12 oz. pasta
- 2 delicata squash, sliced
- 4 slices bacon, chopped
- 1 onion, chopped
- 4 garlic cloves, minced
- 1 cup heavy cream
- 1 cup grated parmesan cheese
- Salt and pepper
- Olive oil
Instructions

Preheat oven to 400°F.

Toss sliced delicata squash in olive oil and season with salt and pepper. Roast for 20-25 minutes.

Cook the pasta according to package instructions and reserve 1 cup of pasta water.

Cook the chopped bacon in a large skillet until crisp. Remove the bacon and leave the fat in the skillet.

Add chopped onion to the skillet and sauté until softened, then add minced garlic and cook for 1 minute.

Add heavy cream to the skillet and bring to a simmer.

Add grated parmesan cheese and stir until melted.

Add the roasted delicata squash and cooked pasta to the skillet and toss to combine. If needed, add some reserved pasta water to loosen the sauce.

Serve topped with the chopped bacon.
