How To Make Delicata Squash Salad Recipe
A hearty yet light salad with roasted delicata squash, crispy kale, tangy feta cheese, and crunchy pistachios.

Ingredients
- 1 medium delicata squash, halved, seeded, and sliced
- 1 small bunch kale, torn into pieces
- 1/4 cup crumbled feta cheese
- 1/4 cup shelled pistachios
- 2 tablespoons olive oil
- 1 tablespoon honey
- 1 tablespoon dijon mustard
- Salt and pepper, to taste
Instructions

Preheat oven to 400 degrees F.

Toss the sliced delicata squash with 1 tablespoon olive oil and season with salt and pepper. Roast on a baking sheet for 20-25 minutes, until tender and lightly browned.

Toss the kale with the remaining tablespoon of olive oil and season with salt and pepper. Roast on a separate baking sheet for 10-12 minutes, until crispy and lightly browned.

In a small bowl, whisk together the honey and dijon mustard to make a dressing.

Arrange the roasted squash and crispy kale on a serving platter. Top with crumbled feta cheese and shelled pistachios. Drizzle with the honey mustard dressing.
