How To Make Roasted Delicata Squash
This bright roasted delicata squash takes only 30 minutes to make! Enjoy tender bites of turmeric-seasoned squash for a healthier side dish.

Ingredients
- cooking spray
- 1½tbspolive oil
- 28ozdelicata squash,(2 pieces), washed, dried
- ¾tspkosher salt
- ½tspground turmeric
- ½tspgarlic powder
- fresh black pepper,to taste
- fresh cilantro,chopped, for garnish
Instructions

Preheat the oven to 425 degrees F. Lightly spray two large nonstick baking sheets with oil.

Slice the squash in half lengthwise and scoop out the seeds with a spoon. Slice the seeded halves into ¼-inch thick slices or half circles, and place them in a large bowl.

Drizzle the squash with olive oil, salt, turmeric, garlic powder, and black pepper. Toss well to coat.

Lay the squash flat on the prepared baking sheets.

Bake in the center of the oven for about 10 to 14 minutes on each side, until golden brown on each side.

Remove from the oven, top with fresh cilantro, serve, and enjoy!
