How To Make Delicata Squash and Black Bean Tacos Recipe
A vegetarian taco filling made with roasted delicata squash, black beans, and Mexican spices.

Ingredients
- 2 delicata squash, seeded and sliced
- 1 can black beans, drained and rinsed
- 1 tbsp olive oil
- 1 tsp chili powder
- 1 tsp cumin
- 1/2 tsp garlic powder
- Salt and pepper to taste
- 8 tortillas
- Optional toppings: diced avocado, salsa, shredded cheese, sour cream
Instructions

Preheat oven to 400°F.

Toss sliced delicata squash with olive oil, chili powder, cumin, garlic powder, salt, and pepper. Roast on a baking sheet for 20-25 minutes until tender.

In a skillet, heat black beans over medium heat until warmed through.

Warm tortillas in the oven or on a skillet.

Assemble tacos by filling each tortilla with roasted delicata squash and black beans. Top with desired toppings.
