How To Make Delicata Squash and Black Bean Tacos Recipe

A vegetarian taco filling made with roasted delicata squash, black beans, and Mexican spices.

Ingredients

  • 2 delicata squash, seeded and sliced
  • 1 can black beans, drained and rinsed
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • 8 tortillas
  • Optional toppings: diced avocado, salsa, shredded cheese, sour cream

Instructions

  1. Preheat oven to 400°F.

  2. Toss sliced delicata squash with olive oil, chili powder, cumin, garlic powder, salt, and pepper. Roast on a baking sheet for 20-25 minutes until tender.

  3. In a skillet, heat black beans over medium heat until warmed through.

  4. Warm tortillas in the oven or on a skillet.

  5. Assemble tacos by filling each tortilla with roasted delicata squash and black beans. Top with desired toppings.
