How To Make Delicata Squash and Cranberry Stuffing Recipe
A savory side dish that combines the sweetness of roasted delicata squash with tart cranberries and earthy mushrooms.

Ingredients
- 1 medium delicata squash, halved and seeded
- 1 tbsp olive oil
- 1/2 onion, chopped
- 1 clove garlic, minced
- 4 oz mushrooms, sliced
- 1/2 cup dried cranberries
- 2 cups stale bread, cubed
- 1 tbsp fresh thyme leaves
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup vegetable broth

Preheat oven to 400°F

Place the delicata squash halves on a baking sheet, and brush with olive oil. Roast for 25-30 minutes, until tender.

Meanwhile, in a large skillet over medium heat, sauté the onion and garlic in olive oil until tender, about 5 minutes.

Add mushrooms and cook for an additional 5 minutes.

Stir in dried cranberries, bread cubes, thyme, salt, pepper, and vegetable broth. Cook for an additional 5 minutes, until the bread has absorbed the liquid.

Remove the delicata squash from the oven and reduce the oven temperature to 375°F.

Spoon the bread mixture into the delicata squash halves.

Bake for 15-20 minutes, until the stuffing is golden brown.
