How To Make Stuffed Delicata Squash Recipe
Roasted delicata squash stuffed with savory rice and vegetables.

Ingredients
- 2 medium delicata squash, halved and seeds removed
- 1 cup cooked Basmati rice
- 1/2 cup diced onion
- 1/2 cup diced bell pepper
- 2 cloves garlic, minced
- 1/2 tsp. dried thyme
- Salt and pepper to taste
- 1/4 cup diced pecans
- 2 tbsp. olive oil
Instructions

Preheat the oven to 375°F.

In a skillet, heat the olive oil over medium heat.

Sauté the onion, bell pepper, and garlic until they are soft and fragrant.

Add the cooked rice, thyme, and pecans to the skillet, stirring to combine everything.

Season with salt and pepper, to taste.

Scoop the rice mixture into the squash halves.

Place the squash halves in a baking dish and bake for 40-45 minutes or until the squash is tender.
