How To Make Delicata Squash and Pomegranate Salad Recipe

This salad is a perfect blend of sweet and savory flavors and is loaded with nutrients.

Serves:

Ingredients

  • 1 Delicata squash, sliced in half-moons
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • 1 cup pomegranate arils
  • 4 cups baby arugula
  • 1/4 cup crumbled feta cheese
  • 1/4 cup chopped pistachios
  • For dressing:
  • 2 tbsp pomegranate molasses
  • 2 tbsp balsamic vinegar
  • 1/4 cup olive oil
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 400°F.

  2. Toss sliced Delicata squash in 2 tbsp of olive oil and season with salt and pepper.

  3. Roast the squash for 20-25 minutes, or until golden brown and tender.

  4. In a small bowl, whisk together pomegranate molasses, balsamic vinegar, and olive oil. Season with salt and pepper.

  5. In a large bowl, toss baby arugula with the dressing.

  6. Top the arugula with roasted Delicata squash, pomegranate arils, crumbled feta cheese, and chopped pistachios.

  7. Serve and enjoy!
