How To Make Delicata Squash and Pomegranate Salad Recipe
This salad is a perfect blend of sweet and savory flavors and is loaded with nutrients.
Serves:
Ingredients
- 1 Delicata squash, sliced in half-moons
- 2 tbsp olive oil
- Salt and pepper, to taste
- 1 cup pomegranate arils
- 4 cups baby arugula
- 1/4 cup crumbled feta cheese
- 1/4 cup chopped pistachios
- For dressing:
- 2 tbsp pomegranate molasses
- 2 tbsp balsamic vinegar
- 1/4 cup olive oil
- Salt and pepper, to taste
Instructions

Preheat oven to 400°F.

Toss sliced Delicata squash in 2 tbsp of olive oil and season with salt and pepper.

Roast the squash for 20-25 minutes, or until golden brown and tender.

In a small bowl, whisk together pomegranate molasses, balsamic vinegar, and olive oil. Season with salt and pepper.

In a large bowl, toss baby arugula with the dressing.

Top the arugula with roasted Delicata squash, pomegranate arils, crumbled feta cheese, and chopped pistachios.
