How To Make Delicata Squash and Chickpea Stew Recipe
A hearty, savory stew featuring tender delicata squash and protein-packed chickpeas.

Ingredients
- 1 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1/2 tsp dried thyme
- 1 delicata squash, peeled, seeded and chopped
- 2 cups vegetable broth
- 1 can chickpeas, drained and rinsed
- 1/2 cup chopped fresh parsley
- Salt and pepper, to taste
Instructions

Heat the oil in a large pot over medium heat. Add the onion and garlic and sauté until softened, about 5 minutes.

Add the cumin, paprika, thyme, and a pinch of salt and pepper. Stir to combine.

Add the delicata squash and vegetable broth and bring to a boil.

Reduce heat to a simmer and let cook for 20-25 minutes or until the squash is tender.

Add the chickpeas and parsley and stir to combine. Cook for another 5 minutes, until everything is heated through.

Season with additional salt and pepper to taste.
