How To Make Delicata Squash and Chickpea Stew Recipe

Serves:

Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp dried thyme
  • 1 delicata squash, peeled, seeded and chopped
  • 2 cups vegetable broth
  • 1 can chickpeas, drained and rinsed
  • 1/2 cup chopped fresh parsley
  • Salt and pepper, to taste

Instructions

  1. Heat the oil in a large pot over medium heat. Add the onion and garlic and sauté until softened, about 5 minutes.

  2. Add the cumin, paprika, thyme, and a pinch of salt and pepper. Stir to combine.

  3. Add the delicata squash and vegetable broth and bring to a boil.

  4. Reduce heat to a simmer and let cook for 20-25 minutes or until the squash is tender.

  5. Add the chickpeas and parsley and stir to combine. Cook for another 5 minutes, until everything is heated through.

  6. Season with additional salt and pepper to taste.
