How To Make Delicata Squash and Caramelized Onion Galette
A savory tart filled with roasted delicata squash, caramelized onions, and tangy goat cheese.

Ingredients
- 1 pre-made pie crust
- 1 medium delicata squash, sliced
- 2 tablespoons olive oil
- 2 medium onions, sliced
- 2 tablespoons butter
- 2 teaspoons brown sugar
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup crumbled goat cheese
Instructions

Preheat oven to 375°F.

Roll out pie crust on a floured surface and transfer to a baking sheet.

Brush delicata squash slices with olive oil and roast in oven for 20 minutes.

While squash is roasting, sauté sliced onions in butter over medium heat until caramelized.

Add brown sugar, salt, and black pepper to onions and continue cooking until onions are golden brown.

Remove pie crust from oven and assemble by spreading caramelized onions over crust, layering roasted squash on top of onions, and sprinkling with goat cheese.

Bake galette in oven for an additional 20 minutes or until crust is golden brown.
