Ingredients
- 4 cups mixed vegetables (such as carrots, cauliflower, bell peppers, green beans)
- 1 cup white vinegar
- 1 cup water
- 1/4 cup mustard seeds
- 1/4 cup sugar
- 1 tbsp salt
- 1 tsp turmeric powder
- 1/2 tsp mustard powder
Instructions

In a saucepan, combine vinegar, water, mustard seeds, sugar, salt, turmeric powder, and mustard powder. Bring to a boil.

Add the mixed vegetables to the boiling mixture and cook for 5 minutes, or until the vegetables are slightly tender.

Remove from heat and let it cool down completely.

Transfer the pickles to sterilized jars and refrigerate for at least 2 days before consuming.

Serve with your favorite sandwiches or as a side dish.
