Ingredients

  • 4 cups mixed vegetables (such as carrots, cauliflower, bell peppers, green beans)
  • 1 cup white vinegar
  • 1 cup water
  • 1/4 cup mustard seeds
  • 1/4 cup sugar
  • 1 tbsp salt
  • 1 tsp turmeric powder
  • 1/2 tsp mustard powder

Instructions

  1. In a saucepan, combine vinegar, water, mustard seeds, sugar, salt, turmeric powder, and mustard powder. Bring to a boil.

  2. Add the mixed vegetables to the boiling mixture and cook for 5 minutes, or until the vegetables are slightly tender.

  3. Remove from heat and let it cool down completely.

  4. Transfer the pickles to sterilized jars and refrigerate for at least 2 days before consuming.

  5. Serve with your favorite sandwiches or as a side dish.
