Ingredients

  • 6 limes
  • 1/4 cup salt
  • 2 cups water
  • 1 cup white vinegar
  • 1/2 cup sugar
  • 1 tsp mustard seeds
  • 1 tsp peppercorns

Instructions

  1. Wash and slice the limes into thin rounds.

  2. In a bowl, combine the lime slices and salt, mix well and let it sit for 10 minutes.

  3. Meanwhile, in a saucepan, bring water and vinegar to a boil.

  4. Rinse the salted limes under cold water and drain well.

  5. In sterilized jars, layer the lime slices, sugar, mustard seeds, and peppercorns.

  6. Pour the hot vinegar mixture over the lime slices, ensuring they are fully covered.

  7. Seal the jars tightly and let them cool to room temperature.

  8. Store the lime pickles in the refrigerator for at least 1 week before consuming.
