  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup strawberry jam
  • 1/2 teaspoon vanilla extract
  • 1 egg

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

  2. In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.

  3. In a large mixing bowl, cream together the softened butter and sugar until light and fluffy.

  4. Add the strawberry jam, vanilla extract, and egg to the butter mixture. Mix until well combined.

  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

  6. Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them at least 2 inches apart.

  7. Bake for 10-12 minutes, or until the edges are lightly golden.

  8. Allow the cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
