Ingredients

  • 1 package of soft tofu, cubed
  • 1/2 onion, thinly sliced
  • 1/2 zucchini, thinly sliced
  • 1/2 cup mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon gochugaru (Korean red pepper flakes)
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 4 cups vegetable broth or water
  • Salt, to taste
  • Green onions, for garnish

Instructions

  1. In a pot, heat sesame oil over medium heat. Add onions and garlic, and sauté until fragrant.

  2. Add zucchini and mushrooms, and cook until slightly softened.

  3. Stir in gochugaru and soy sauce, and cook for an additional minute.

  4. Add tofu and vegetable broth or water to the pot. Bring to a boil, then reduce heat and simmer for 10 minutes.

  5. Season with salt to taste.

  6. Garnish with green onions and serve hot with steamed rice.
