  • ½ cup popcorn kernels
  • 1 cup granulated sugar
  • ½ cup unsalted butter
  • ¼ cup light corn syrup
  • ½ teaspoon salt
  • ¼ teaspoon baking soda
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 250°F (120°C). Line a baking sheet with parchment paper.

  2. Pop the popcorn using your preferred method and transfer it to a large bowl.

  3. In a medium saucepan, combine the sugar, butter, corn syrup, and salt. Cook over medium heat, stirring constantly, until the mixture comes to a boil. Continue boiling for 2 minutes without stirring.

  4. Remove the saucepan from the heat and stir in the baking soda and vanilla extract. The mixture will bubble and froth.

  5. Pour the caramel mixture over the popcorn and gently toss to coat evenly.

  6. Spread the coated popcorn onto the prepared baking sheet and bake for 15 minutes.

  7. Remove the caramel corn from the oven and give it a gentle stir. Return to the oven and bake for an additional 15 minutes.

  8. Remove the baking sheet from the oven and let the caramel corn cool completely on the baking sheet.

  9. Once cooled, break the caramel corn into smaller pieces and serve.
