  • 1/2 cup soy sauce
  • 1/4 cup mirin
  • 1/4 cup dashi stock
  • 1 tablespoon sugar
  • 1 teaspoon grated ginger
  • 1 teaspoon finely chopped green onion


  1. In a small saucepan, combine soy sauce, mirin, dashi stock, and sugar. Bring to a simmer over medium heat.

  2. Cook for 3-4 minutes until the sugar has dissolved and the sauce has slightly thickened.

  3. Remove from heat and stir in grated ginger and chopped green onion.

  4. Let the sauce cool before serving with tempura.
