Ingredients
- 4 cups rhubarb, chopped
- 1/2 cup sugar
- 1 tbsp cornstarch
- 1 tsp lemon juice
- 1 cup all-purpose flour
- 1/4 cup sugar
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- 1/4 cup unsalted butter, cold and diced
- 1/4 cup milk
Instructions

Preheat the oven to 375°F (190°C).

In a medium bowl, combine the rhubarb, sugar, cornstarch, and lemon juice. Mix well and spread evenly in a baking dish.

In a separate bowl, whisk together the flour, 1/4 cup sugar, baking powder, and salt. Cut in the butter until the mixture resembles coarse crumbs.

Stir in the milk until just combined. Drop spoonfuls of the biscuit mixture onto the rhubarb, covering as much as possible.

Bake for 35-40 minutes, or until the topping is golden brown and the rhubarb is bubbly.
