  • ¾lbgreen beans
  • 2tbspextra virgin olive oil
  • 1medium shallot
  • 2tbspcider vinegar
  • 1tspsugar
  • salt and freshly ground pepper,to taste

Instructions

  1. Place the green beans in a steamer basket set over a large saucepan of boiling water. Steam for about 5 minutes until bright green and crisp-tender.

  2. In a medium skillet, heat the oil. Add the shallot and cook over high heat, stirring, for about 2 minutes until softened. Add the vinegar and sugar; stir to dissolve the sugar. Remove from the heat and add the beans.

  3. Season with salt and pepper, toss well, and serve. Enjoy!
