A refreshing and healthy combination of pasta, vegetables, feta cheese and Mediterranean-inspired seasonings.

Ingredients

  • 8 oz pasta
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup red onion, diced
  • 1/4 cup feta cheese crumbles
  • 1/4 cup Kalamata olives, halved
  • 2 tbsp fresh parsley, chopped
  • 1/4 cup olive oil
  • 3 tbsp red wine vinegar
  • 1 clove garlic, minced
  • 1/2 tsp dried oregano
  • salt and pepper, to taste

Instructions

  1. Cook pasta according to package instructions and rinse with cold water.

  2. In a large bowl, combine the cooked pasta, cherry tomatoes, cucumber, red onion, feta cheese crumbles, Kalamata olives, and chopped parsley.

  3. In a separate bowl, whisk together the olive oil, red wine vinegar, minced garlic, dried oregano, salt, and pepper.

  4. Pour the dressing over the pasta salad and toss until combined.

  5. Serve chilled.
